
St Piran's Day is one of our favourite days of the year - the national day of Cornwall, celebrating the patron saint of tin miners and Cornwall. There are parades, Cornish folk music and an excuse to indulge in some traditional Cornish food and drink. Served with pancakes. Obviously.
Pancakes
110g (4oz) plain flour
2 eggs
250ml (8 fl.oz.) milk
Pinch of salt
Orange sauce
110g (4oz) caster sugar
Grated rind and juice of two large oranges
2oz butter
Large slug of Cointreau
One large orange peeled and sliced
1. Beat all pancake ingredients together and cook according to your personal taste, thick or thin pancakes
2. To make the sauce, heat the sugar in a pan until brown
3. Keep a close eye on it as it can burn quickly. Take off the heat and add the butter.
4. Add the orange juice, rind and Cointreau and warm gently with the orange slices
5. Place pancake on a plate and smother in the delicious orange sauce
6. Ignite if you wish and serve with a generous dollop of Rodda's Clotted Cream
